Use

When a thing (or a person) changes into something (or somebody) very different.

When he isn't drinking alcohol, he is very quiet and shy. But when he drinks it, he TURNS INTO a different person. He is so loud and he will talk to anybody.

In the Marvel comic books, when the character Bruce Banner becomes angry, he TURNS INTO the Incredible Hulk.
